Cada 28 de abril se celebra con gran fervor y entusiasmo la festividad de San Prudencio, patrón de la provincia de Álava. Pero esta celebración no es solo religiosa, también tiene un fuerte componente gastronómico que deleita los paladares más exigentes del público local y de los visitantes que vienen a disfrutar de la fiesta.
San Prudencio, además de ser un santo venerado, es el protagonista de una tradición que ha marcado la identidad culinaria de Álava. La fecha coincide con la época de lluvias y por un producto muy primaveral que da nombre a nuestra marca: los perretxiCos.
Los perretxiCos, también conocidos como setas de San Jorge, son un tesoro gastronómico que se consume principalmente en fechas cercanas al día de San Prudencio en Álava. Estas setas silvestres, de sabor delicado y textura exquisita, y son el ingrediente estrella de numerosos platos durante esta época del año. Desde revueltos hasta guisos y conservas, los perretxicos son una muestra más de la riqueza culinaria que ofrece la celebración de San Prudencio en Álava. Su escasez y elevado precio hacen que sean considerados una verdadero tesoro para los paladares más gourmets.
Otro plato muy típico de estas fechas son los caracoles. Son otro manjar que no puede faltar en la mesa durante esta época en la mesa de los alaveses. Preparados con diversas recetas, los caracoles alaveses se cocinan una salsa con diferentes variantes (algunas incluyen perretxiCos), creando un plato irresistible para los amantes de la gastronomía local. Su consumo se ha convertido en toda una tradición durante esta festividad.
Para acabar queremos hablar de una elaboración que triunfa en las campas durante la romería a la Basílica de Armentia de San Prudencio: los talos. Estos son una especie de torta de maíz típicos del País Vasco, que se elaboran de forma tradicional en esta época del año. Rellenos con ingredientes como chistorra, bacon, queso o chocolate, los talos son perfectos para disfrutar en compañía durante las celebraciones de San Prudencio y suelen degustarse con familia o amigos acompañados de una botella de sidra.
